Independence Day Potluck

Over the long weekend we had friends over for a potluck. So I decided to make some appertizers and drinks. I made a plate with deviled eggs, meatballs, and pineapple hotdog skewers. I also made imitation crab meat pasta salad.

Deviled Eggs
Put 10 eggs into a pot and add enough water to cover the eggs. Add in a tablespoon of white vinegar. Bring pot to boil and cook for 12 minutes in medium heat. Peal the eggs when they are cool. Cut the eggs in half and take out the yolk. Mix the yolk with salt, curry powder, and mayonnaise. Becareful not to add to much mayo or else the mixture will be too runny. Put yolk mixture into a decorating bag and use a star tip to pipe into the egg white.

Pineapple Hotdog Skewers (A favorite party food as a kid)
Use hot dog franks and cut into bite size. Make four slits from one end to about half way through the hot dog. Cook hot dog bites by pan fry or boiling. As they are cooked, the slits on the hot dog will spread open. Use toothpicks to skewer hot dog bites and pineapple chunks.
